Insistence Will Lead To Resistance From Teenage Boy

Question

I am a single mom with only one child, my 15yo son. He has recently started saying that he "isn't hungry" at dinnertime, or will "eat later", and says he doesn't want to eat with me. He often does not end up eating the plate of food I leave for him, but instead raids the fridge for snacks.
Question: Should I insist that he join me for a family meal? It is only the two of us. Until now, we have always had regular sit-down meals, and I cook. I am concerned about the family disconnection, since dinner was often the time that we had to talk. I am also concerned about him eating properly.
