8 year old : Not Doing His Best

Question

Our eight-year old son is a relatively well behaved boy, but, he's somewhat of a slacker...meaning he doesn't always do his best. An example, he's allowed to select from various exercises to do his spelling homework, and he always chooses the easiest ones. He does the bare minimum of requirements on his school projects, etc. We take a "hands-off" "it's your responsibility" approach to homework, so I don't nag him about doing the harder exercises or doing a better project (both of which he is VERY capable of doing). Is there any way to motivate him to work to his potential? Or, should I just let sleeping dogs lie?
