Ending a soothing bad habit

Question

My son has had a habit of chewing on his knuckle fairly regularly (and has a big callus on his middle finger to show for it), but recently it's become more frequently and has extended to other fingers or several knuckles at a time.
It often occurs when he's very absorbed in a story or activity, or when he's tired or upset. I don't think he realizes when he does it. Another close adult family member also does something similar. I have read that Mr. Rosemond recommends cutting out bad habits before they are too ingrained... but I haven't figured out a way to accomplish this. What can I do?
