Curing a 3-Year-Old Picky Eater

Question

I've recently started the Tablespoon method for my very "picky" 3 year old boy. After a few tries, he's had one successful meal where he's eaten all three foods and gone on to get seconds. Tonight, though, he finally gagged the last two bites of sweet potatoes down, and then promptly threw everything up and wouldn't eat anything else. I said "picky" earlier because he will often psyche himself out against a food and make himself gag, although tonight was the first time it's led to throwing up. Sometimes he psychs himself out on something that he's previously liked, or like tonight, on sweet potatoes with cinnamon, which is his favorite flavor of pouches, that he even enjoyed earlier today. Any suggestions to help him get over the gagging?
